Frites Atelier, a long-awaited addition to the local gastronomic scene, officially opened its doors today in London's Soho district. This concept, backed by three-star chef Sergio Herman, brings something unique to the metropolis: gourmet fries as a main course, not just a side dish.

Frites Atelier was founded in Amsterdam in 2016 as a joint project between Sergio Herman and entrepreneur Laurent Hompes, with the aim of elevating the simple French fry into a culinary experience. Since then, the concept has grown and is now successfully operating in several European cities, including Antwerp, Brussels, and Ghent.

Frites Atelier is not your average chip shop – it offers meticulously prepared meals with a clear emphasis on technique, ingredients, and taste. The basic frites are prepared using a special double-frying method that Herman and his team have spent years developing, which makes the chips crispy on the outside and light and fluffy on the inside. They are served with a selection of homemade sauces (e.g., truffle mayo, béarnaise, andalouse, or basil mayonnaise) and creative "Frites Specials" – such as Flemish Beef Stew, Parmesan & Basil, Sea Nori, and exclusively for London, Cheddar Supreme.

Why London?

The new branch at 34 Old Compton Street is the concept's first British outlet and has deliberately opened in an area known for its bustling nightlife, theatres, and gastronomy. The operators promise opening hours until 3 a.m. from Wednesday to Saturday, making Frites Atelier the ideal stop for an evening get-together or a late-night snack after a cultural or social event.

More than just chips

Frites Atelier strives to offer a complete experience – in addition to sophisticated French fries, the menu also includes several types of burgers and croquettes, along with carefully selected drinks, cocktails, beer, and wines that complement the experience of current flavors.

In addition, the brand is connecting with new trends in tourism: thanks to a partnership with the Giraudi Group, the concept is preparing for further international expansion and strengthening its position as a luxury fast-casual player with a clear vision.

Sergio Herman – From Three Michelin Stars to French Fries

Sergio Herman is not just a promoter of chips – he is one of the biggest names in European gastronomy. During his career, he ran the Oud Sluis restaurant, which held three Michelin stars, and after its closure in 2013, he devoted himself to projects that bring quality cuisine to a wider audience. Frites Atelier is precisely one such project – it shows that even a seemingly simple food like chips can be prepared with precision and offered as something exceptional.
