Prague’s Forbína is set to welcome Aldea, ranked 26th among Europe’s best bars

Prague’s Forbína bar is continuing its series of guest appearances featuring some of the most prominent figures on the global bar scene. On Tuesday 28 July, it will welcome the team from Aldea in Barcelona, which placed 26th this year in the inaugural Europe’s 50 Best Bars ranking. Co-founders Francesco Falco and Silvia Dorninger will be behind the bar, bringing their distinctive take on modern cocktail gastronomy to Prague.

Ahead of the evening’s Guest Shift, a masterclass will take place from 2.00 pm, during which they will present Aldea’s philosophy, their work with seasonal ingredients, and their approach to sustainability and cocktail creation. Later that evening, from 8.00 pm, the Aldea team will take over the bar and offer guests three signature cocktails that perfectly capture their style.

The menu will feature the Piedra Santa, combining Diplomático Reserva Exclusiva rum and Woodford Reserve bourbon with notes of roasted barley, caramel, miso and banana water. Lovers of fresh and slightly savoury flavours will appreciate the Ojo Rojo, which blends Gin Mare, sake, basil spirit, tomato water and fermented strawberries. The third cocktail, Casa Azul, combines Herradura Blanco tequila and mezcal with Cocchi Rosa, lemon verbena, melon, guava and white cocoa. All drinks will be available throughout the evening for 285 Kč.

Aldea is based in Barcelona’s El Born district, and its concept is rooted in the “farm-to-glass” philosophy. Silvia Dorninger, the daughter of Austrian farmers, and Francesco Falco have created a business that combines technical precision with a deep respect for nature, seasonality and local ingredients. Most ingredients are produced in their own laboratory—from fermented products and spirits to homemade syrups and other components that give the cocktails their unmistakable character. This approach was recognised this year by the voters of the Europe’s 50 Best Bars Academy, who ranked Aldea 26th among Europe’s best bars.

The Guest Shift at Forbína in Prague will be a unique opportunity to sample cocktails from one of Europe’s most intriguing bars, served directly by its founders. It will also mark another instalment in a series that regularly sees Prague become a meeting point for the local bar scene and the world’s finest.
