Autumn brings a new seasonal menu to 1890 Restaurant & Bar—one that draws on Czech ingredients, bold flavours and hard work in the kitchen. Wild mushrooms, game, root vegetables and fruit form the basis of the menu, which takes inspiration from local culinary traditions while giving them a contemporary twist. The result is a menu that makes the most of the natural character of autumnal ingredients and combines familiar flavours with thoughtful details.
The meal begins with smoked trout, accompanied by sauerkraut jus and rye-bread croutons. This combination offers subtle smokiness, a pleasant tang and a texture that sets the tone for the next course: a porcini mushroom consommé served with mountain cheese wrapped in puff pastry. The dish’s distinctive flavour is enhanced by the restaurant’s own fermented garum, which adds another layer of depth to this traditionally inspired combination.
The main courses focus on ingredients that are an integral part of the Czech autumn. Wild boar cheeks are slow-cooked and served with a juniper demi-glace, horseradish potato purée and pickled pumpkin. The focus on game continues with venison saddle in a fragrant marinade of cranberries and thyme. A smoked demi-glace with mushrooms and Jerusalem artichoke—a traditional root vegetable with a delicately earthy flavour—rounds off this distinctive dish.
For those who prefer a lighter main course, there is cod poached in smoked butter. It is accompanied by a purée of roasted celery and apple, which brings freshness and a fruity contrast to the dish.
The finale returns to Czech sweet classics and ingredients with a story of their own. Cottage cheese dumplings with plums are reminiscent of traditional home cooking, while the honey mille-feuille with pears and pumpkin mascarpone offers a more contemporary take on an autumnal dessert. A special touch is the honey from the restaurant’s own rooftop hives, which links this sweet finale to the very place where the menu is created.
The autumn menu at 1890 Restaurant & Bar showcases seasonal cuisine that remains true to its Czech roots. It builds on familiar ingredients and traditional flavours while utilising techniques and combinations that give them a new dimension. It is available throughout the autumn season.
