British chef Gordon Ramsay has announced the opening of a new restaurant, Gordon Ramsay at The Mere, which will be located at the luxury Fairmont Cheshire resort. The opening is planned for summer 2026, and the restaurant is set to become the main gastronomic attraction of the newly renovated hotel.
The project is part of an extensive transformation of the historic The Mere hotel, which is undergoing a multi-million-pound renovation and will be renamed Fairmont Cheshire, The Mere upon completion. The Ramsay Group’s restaurant will be its signature establishment and a key element of the resort’s new gastronomic identity.
The flagship restaurant of the new five-star resort
The Mere Hotel stands on 157 acres of land in Cheshire, and its redevelopment includes redesigning the rooms, expanding the wellness facilities, and enhancing the gastronomic offering. After the renovation, it will offer 116 rooms, including 27 suites, and will also retain its golf course.
Gordon Ramsay at The Mere will be the resort’s main dining venue and is being created through a collaboration between Gordon Ramsay Restaurants Global and the Fairmont hotel brand. The partnership builds on the long-standing relationship between the two brands—Ramsay already operates several restaurants at London’s Savoy Hotel, which is managed by Fairmont.
Ramsay’s return outside London
The new venture also has symbolic significance for Ramsay’s career. It will be his group’s first fine-dining restaurant outside London in the UK in more than twenty years.
Ramsay’s group has been expanding rapidly in recent years. According to available data, it currently operates around 90 restaurants worldwide, ranging from fine dining and hotel restaurants to casual concepts such as Hell’s Kitchen, Street Pizza, and Bread Street Kitchen.
The empire, which Ramsay founded in 1997, has earned a total of 17 Michelin stars throughout its history, several of which it still holds today. Its flagship, Restaurant Gordon Ramsay in Chelsea, London, has held three stars continuously since 2001.
Furthermore, the expansion continues—the group plans to open its 100th restaurant and is also preparing new projects in London, including the first British Hell’s Kitchen.
The arrival of Ramsay’s restaurant will significantly strengthen the gastronomic scene in the north-west of England. The luxury resort in Cheshire expects the project to attract not only hotel guests but also gastronomic visitors from Manchester and the wider region.
