Bratislava's Mirror Bar, which this year reached the 25th place in The World's 50 Best Bars, is a symbol of confidence in the Slovak bar scene. Although its menu is among the most sophisticated in Europe, this time its Head Bartender, Katarína Nékiová, invited us to experience something different - non-alcoholic drinks. No compromises, no lemonade in a glass. Just pure ideas, precise technique, and a taste that doesn't even recall the absence of alcohol.

A Mirror of Precision

The Mirror Bar at the historic Carlton Hotel embodies the term "modern classic." The sleek interior, with its dark walls, gold accents, and subtle lighting, creates an impression of refinement without being pretentious. When Katarína Nékiová is behind the bar, the atmosphere changes - it's as if the mirrored surface of the bar becomes a laboratory of emotions. Every movement has meaning, every detail has its place.

"Within our cocktail menu, we place the same emphasis on non-alcoholic drinks as on alcoholic ones. I mean, non-alcoholic cocktails are becoming more and more of a trend," says Katka Nékiová with a smile as she mixes the first of her neat creations.

"A soft drink is not about missing something. It's about focusing on everything else - the texture, the smell, the feel," she adds as she pours the first cocktail from the slightly cloudy liquid.

Taste as an Experience, Not a Substitute

The Mirror Bar's non-alcoholic cocktail menu showcases the signature style of Katarína Nékiová and the team she leads as Head Bartender - subtlety, thoughtfulness, and the ability to convey complex flavors without a drop of alcohol. Each of the drinks is an experience in itself, from conception to service.

The first is the Nogroni, a non-alcoholic variation on the classic Negroni. Instead of gin, vermouth, and Campari, it features a pair of spirits, Nochino Ruby and Nochino Botanico, which combine notes of pomegranate, cranberry, chokeberry, juniper, cinnamon, and herbs. Complemented by Crodino - a slightly bitter Italian soda - they create a balanced, fruity-herbal profile with a subtle bitterness in the aftertaste. Served on a luminous coaster in a minimalist Nude Glass, the drink's elegant visual clarity is enhanced, while orange zest adds a fragrance that gives the drink a classic signature.

Betting on a sweeter note is the No Rush - a cocktail for guests who want to indulge in a non-alcoholic version with a rounder taste. It combines Nochino Ruby, house Champagne Cordial (a syrup made from flat Perrier Jouët, sugar, and acid, editor's note), and Watermelon Red Bull, with a splash of lime juice for balance. The result is fresh, fruity, and playful, with a subtle effervescence and notes of melon and grapes. Served in a chess piece-shaped design glass on a marble coaster, it's complemented by rice crisps with fermented fruit powder - a detail that reminds you that nothing goes to waste at Mirror Bar.

The third in the collection, Bubbles Without Troubles #3, builds on the finesse of sparkling teas. The combination of Sparkling Tea Blu, Pineapple & Star Anise Bitters, and Champagne Solution creates a cocktail with the ease and refinement of champagne. White, jasmine, and black teas combine in flavor to create a layered profile with a touch of tropical fruit and subtle spice. Served in a flute-style glass with an edible flower, it looks festive yet remains naturally pure.

The next chapter is Green Piece, a citrus twist on the classic Gimlet. The base is Nochino Botanico with juniper, cinnamon, and spice, complemented by Nochino Citrus with notes of lemon, grapefruit, timur pepper, and passion spice. Aloe Vera Cordial adds freshness and a silky texture. The result is a fruity, slightly sour cocktail with a subtly sweet undertone and a soothing citrus zest aroma.

The fermented character is brought by the Paragon Mate cocktail - a water kefir prepared with a base of tibi crystals, fermented first with dried apricots and then enriched with mate tea. Katarína flavors the drink with Paragon Rue Berry Cordial, which enhances the fruitiness and adds a light acidity. The drink is lightly sparkling, fresh, and naturally vitalizing, served in a simple Nude Glass with a scenic tray of stabilized moss.

And finally, the Non Alco Lux - a non-alcoholic twist on the very familiar Mirror Bar Lux signature cocktail, inspired by the classic PornStar Martini. It is created by combining Nochino Botanico, passion fruit syrup, lime juice, and Codorniu Zero. The result is a voluptuous, tropical fruit drink with a balance between sweetness and acidity, served in a curvy cognac glass, illuminated with soft light, and complemented by a vibrant bonsai.

"These days, many of our guests prefer non-alcoholic cocktails. That's why we decided to create twists on classic cocktails and translate them into a non-alcoholic version," concludes Katka Nékiová.

When Courage Tastes Like Balance

There is a sense of confidence and playfulness at Mirror Bar. The bar, which has made it into the top 50 in the world, has already achieved a lot on the European bar scene - and that's why it can afford to experiment. Its non-alcoholic offerings are not an add-on, but a full chapter that expands the notion of a "bar experience".

Katarína Nékiová and her team prove that boldness in mixology doesn't have to mean extremes. It can mean purity, balance, and respect for the ingredients. Whether a guest reaches for a cocktail with or without a spirit, they leave with the same feeling: that they have been to a place where craft becomes art.

In recent years, Mirror Bar in Bratislava has become an icon not only in Slovakia but also in the Central European bar scene. And if we see anything in its mirror today, it is the future of mixology - open, conscious, and unexpectedly subtle.

Because when the world's best make a soft drink, it tastes like courage.
