Bubbles in the spotlight: Three Cents at Alma showed off the flavour of a modern highball

An exclusive evening at Alma in Prague combined precise mixology, Mediterranean lightness and a clear message: a quality mixer is not a detail, but a foundation. The Three Cents brand came to Alma in Prague not only to present its new products, but above all to show what a fresh, modern drink should taste like today.

The evening took place at a well-known Prague venue, which was transformed into an informal but highly focused platform for the bar community to meet. The main protagonists were the creators of the Three Cents brand – its co-founder, George Bagos, and its global brand ambassador, Alex Sourmpatis. It was their combination of strategic insight and bar experience that gave the evening its clear structure and energy.

Aperitivo as a mindset, not a trend

The introduction took the form of a masterclass on where the aperitivo moment is heading and why bartenders today are increasingly looking for purity, clarity and lightness. In this spirit, two new products were introduced: Three Cents Tonic Water and Three Cents Fig Leaf Soda.

The new tonic is based on spring water, high-quality natural quinine and a minimal amount of added aromas to give maximum space to the gin itself. High-pressure carbonation creates fine, long-lasting bubbles that keep the drink lively until the last sip. Fig Leaf Soda, on the other hand, opens a completely different chapter: the aroma of hand-picked fig leaves from the Greek islands is fresh, slightly herbal and surprisingly elegant. It works on its own or as a sophisticated mixer for aperitifs and low-alcohol cocktails.

Modern highballs at their best

As soon as Alex stepped behind the bar, theory immediately turned into practice. The four cocktails he served during his guest shift clearly demonstrated how well Three Cents mixers suit the modern highball aesthetic.

The Teeling Small Batch-based Phoenix Tropical Highball combined banana, coconut and red miso with pineapple soda. The result was a layered drink in which tropical sweetness meets umami depth and a dry, refreshing finish.

Drink Your Greens, based on Bombay Sapphire, cucumber-mint Finlandia vodka, green apple and rocket, was green, juicy and extremely drinkable – the tonic water served as an essential carrier of freshness and structure.

Smoky Paloma combined Patrón Silver with mezcal and pink grapefruit soda. The rim, in which dried and then crushed carrots were combined with salt, significantly enhanced the flavours. In this drink, you can enjoy smoke, citrus bitterness and subtle sweetness working together in perfect balance, without unnecessary heaviness.

And the Espresso Martini Highball? Finlandia vodka, cold brew, crème de cacao, coconut and Fig Leaf Soda created an unexpectedly light, aromatic drink, where the depth of the coffee gained a herbal, fresh twist and high drinkability.

The evening at Alma wasn't just about new products. It was about how today's mixology must be thought through in detail – and how a quality mixer can not only complement a drink, but also define it. Three Cents in Prague clearly showed that bubbles can be both subtle and distinctive at the same time. You just need to give them the right space.
