From Chicago-style deep-dish pizza to Texas-style ribs – the new Route54 restaurant brings the flavours, energy and unbridled atmosphere of the American open road to Prague. Under the guidance of Michelin-starred chef Gal Ben Moshe, a concept is taking shape in Karlín that transforms perceptions of American cuisine into an authentic gastronomic experience.
A new restaurant is opening at Sokolovská 54, ambitiously redefining expectations of American cuisine in Prague. Route54 brings to Karlín the atmosphere of classic diners and the culinary map of one of America’s longest roads – the 1,197-mile Route 54, which connects New Mexico with Illinois. Under the guidance of head chef Gal Ben Moshe, however, this journey symbolically extends all the way to Chicago, allowing guests to enjoy a margarita with churros, Chicago-style deep-dish pizza and the iconic Italian sandwich made famous by the TV series The Bear – all in one place.
Route54 is not just a restaurant, but a concept built on movement, contrasts and energy. It connects the pulsating rhythm of Karlín with the spirit of American highways – places where cultures, flavours and stories meet. During the day, it functions as an open, relaxed space ideal for working lunches; in the evening, it transforms into a lively meeting place. The atmosphere is further enhanced by music nights and DJ sets designed to evoke American nightlife – loud, authentic and full of life.
The venue is located on the ground floor of the Pulse8 hotel, which is part of the Jan Hotels group. It was under this banner that the entire Route54 concept was created, with Gal Ben Moshe – a chef with six Michelin stars to his name – serving as its creative director. His signature style is evident throughout the menu: American cuisine here is not reduced to the stereotype of burgers, but instead showcases its true diversity and cultural layers.
Along the Route54 route, you’ll find smoky Midwest barbecue, Texas-style ribs, Oklahoma smash burgers, deep-dish pizza and corn ribs. Each dish bears Moshe’s signature approach: respect for the original style, paired with a playful twist and attention to detail. The result is a menu that feels both authentic and contemporary. The offering is complemented by classic cocktails and signature drinks inspired by the individual states through which Route 54 passes, as well as a selection of beers from Czech and American breweries.
Gal Ben Moshe is one of the most prominent figures on the contemporary gastronomic scene. The Israeli chef gained experience in London under Jason Atherton and Marcus Wareing, as well as at the legendary Chicago restaurant Alinea under Grant Achatz. In 2012, he moved to Berlin, where he opened the restaurant Glass and later Prism, which was awarded a Michelin star in 2020 and retained it until its closure in 2025. He is currently behind the Michelin-recommended restaurant Parzival and, more recently, the Route54 concept, where he combines his international experience with the laid-back energy of an American diner.
Route54 is thus not just a themed restaurant, but a gastronomic road trip – a journey across America set in the heart of Karlín, and tasting like a party that’s really got going, with a touch of wild abandon.
