For one evening, the Caribbean came to Prague’s elegant Piano Bar. Brugal presented its new Colección Visionaria Edición 03 Coconut, the final instalment in its limited-edition collection, which combines Dominican rum, coconut and innovative woodworking techniques. The result is an ultra-premium rum whose character is defined not only by its ageing but also by the aroma imparted to the cask by fresh coconut before it is filled.

A recent evening at The Piano Bar in Prague was all about rum, coconut and the art of cocktail-making. Brugal unveiled its new Colección Visionaria Edición 03 Coconut – a limited-edition bottling that brings to a close an ambitious series inspired by ingredients deeply connected to the Dominican Republic. Following cocoa and coffee comes coconut, so characteristic of the island that it became the natural choice for the final chapter of the collection.

Behind this new release is Jassil Villanueva, Brugal’s fifth-generation Maestra Ronera. She chose coconut for Edición 03, building on the concept behind the entire collection: finding a way to imbue the rum not only with flavour but also with the atmosphere of her native Dominican Republic. Brugal describes the Colección Visionaria line as a project based on the innovative Aromatic Cask Toasting technique, which involves flavouring the casks before the rum is even placed inside them.

The coconut doesn’t go into the rum, but into the cask

It is perhaps the production method that makes this new edition so intriguing. Fresh coconut flesh is first toasted in new French oak casks. The coconut is then removed, and the rum is placed into these aromatised casks, where it subsequently matures. The aim is not to create a sweet “coconut rum”, but a much more subtle interplay of tropical notes with the character of wood, vanilla, caramel and spices.

The result is an amber-gold spirit with aromas of creamy vanilla, burnt sugar, citrus, coconut water and subtle smoky or toasted notes. On the palate, coconut water meets orange peel, vanilla and caramel, while wood and smoke lend the rum its structure. The finish is long and spicy, with notes of toasted oak, toffee and almonds.

This is precisely where the difference between mere flavouring and genuine work with aromatics becomes apparent. In this case, coconut is not intended to be a dominant flavour that overpowers the character of the rum. Instead, it forms part of the structure of the final profile – much like in cooking, where an ingredient need not take centre stage to have a significant impact on the result.

Edición 03 has an alcohol content of 45 per cent and, according to official figures, only six batches will be produced, totalling fewer than 22,000 bottles. Each bottle is hand-sealed, bearing Jassil Villanueva’s signature and the specific batch number. The distinctive mesh, one of the most recognisable features of Brugal bottles, has this time been given a navy-blue finish.

From Negroni to a coconut Old Fashioned

However, the Prague premiere was not just about tasting the rum itself. The evening took on a distinctly cocktail-oriented character, and guests were able to sample this new addition to the portfolio in several different forms.

The evening kicked off with cocktails based on Brugal 1888. The “Maestro’s Welcome” combined the rum with coconut syrup and coffee bitters, while the “Negroni Dominicana” played on the contrast between Brugal 1888, Campari and vanilla-infused sweet vermouth. The “Cafecito Martini” blended rum with espresso, coffee liqueur and sugar syrup, while the “Dominican Daiquiri” took the classic route of rum, lime juice and sugar syrup.

The second part of the menu was dedicated entirely to the new Visionaria range. The Coconut Highball featured Brugal Colección Visionaria 03, sparkling coconut water and orange bitters. An even bolder interpretation was the Coconut Old Fashioned, in which the same rum was complemented by coconut water in the form of an ice sphere and Angostura bitters. The two cocktails thus offered two different approaches to working with the new edition – ranging from a fresh, extended highball to a more concentrated and slower-paced Old Fashioned.

It is, after all, a logical way to introduce a limited edition. Visionaria need not remain solely in the “rum for collectors” category: its complexity also offers scope for bartenders to highlight, tone down or place the rum’s individual layers in a completely new context.

The final chapter evokes the Dominican Republic

The Colección Visionaria is thus not merely a series of a few limited-edition bottles. It is a story that Brugal tells through its raw materials and its work with the cask. The brand’s official materials for the first edition describe a similar approach to working with Dominican cocoa, which was used to flavour the casks; Edición 02 then developed the coffee theme.

In the third and final edition, the story returns to coconut palms, the tropical sun and the simple image of a fresh coconut filled with coconut water. This is where the concept behind the entire collection is particularly elegant: rather than explaining the Dominican Republic through exotic clichés, it seeks to translate its character into scents and flavours with a specific origin.

“Colección Visionaria was born out of a desire to capture the beauty of my homeland using 100 per cent Dominican ingredients,” says Jassil Villanueva. For this latest edition, she says she chose coconut as a symbol of the island’s rhythm – from the shade of the coconut palms to the communal ritual of drinking coconut water.

Colección Visionaria Edición 03 Coconut will go on sale in the Czech Republic from October 2026. The recommended retail price is 2,450 Kč including VAT. With this release, Brugal concludes a collection that straddles the line between traditional rum-making craftsmanship and contemporary experimentation. The Aromatic Cask Toasting technique serves as the common thread: here, the cask is not merely a vessel in which the rum waits out its time, but an active component of the final flavour.

More than 135 years after the brand’s founding, Brugal thus continues its dialogue between heritage and innovation. This time, it takes the form of coconut, French oak, fire and rum. And if last night at The Piano Bar Prague could be summed up in a single impression, it would be that the final chapter of Visionaria is not built on the spectacle of the limited-edition bottle itself, but above all on just how far the character of the rum can be pushed without a single added ingredient.
